At first we can start with a cookie recipe...
Classic peanut butter cookies
( They're absolutely our favorite :) )
Ingredients:
200 g unsalted butter, softened to room temperature
300 g creamy or chunky peanut butter ( we prefer chunky :) )
300 g granulated sugar
2 eggs
300 g plain flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Directions:
Using a hand mixer, cream the softened butter and sugar together on medium speed until smooth. Add the eggs and mix on high until combined, for about 1 minute. Add the peanut butter and mix on high until combined. Set aside.
In a separate bowl, toss the flour, baking soda, baking powder and salt together. Add to the wet ingredients and mix on low until combined. The dough will be thick, yet very sticky. Cover the dough tightly and chill for at least 1 hour in the refrigerator.
Preheat oven to 180 C degrees. Line two large baking sheets with parchment paper or silicone baking mats.
Roll balls of dough, about 1,5 tablespoon of dough per cookie. Place it on the baking sheets. Press fork into the tops to create criss-cross pattern. Bake for 10 minutes or until very lightly browned on the sides. The centers will look very soft and undone. Remove from the oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. The cookies will continue to"set" on the baking sheets during this time. I make thees cookies often, again and again, and we can't get enought of them.
